This is a great recipe for filling up on fibre and veg, and makes a good packed lunch. I often add some flaked poached or hot smoked salmon for extra flavour. The wholegrain rice makes it super-healthy. It can keep for a day or two in the fridge too. I usually just add more fresh coriander to get that lovely fresh taste.
